I have some past their best bananas and I only like them green and firm (weird I know). I found this - anyone tried anythiing similar? I have all the ingredients.

I used to make a very simple banana cake. Start with victoria sandwich recipe, replace up to half the sugar-and-butter with mashed over-ripe banana (weigh the bananas, reduce sigar-and-butter by same amount as weight of bananas), add half a teaspoon of baking powder with the flour, bake as for a madeira recipe. Simple a bananaey, very moist, sponge cake.Flowers come in too many colours to see the world in black-and-white. -
I use a butter cake recipe and add 3 mashed bananas. Very nice and moist!Whoever plants a garden believes in the future.

It was quite sweet so will prob use less next time. Am already planning on what to add (walnuts or pecan maybe? yum, or choc chips)Comment
