  • banana cake

    I have some past their best bananas and I only like them green and firm (weird I know). I found this - anyone tried anythiing similar? I have all the ingredients.
    Thought I might have a stab at it.

    I used to make a very simple banana cake. Start with victoria sandwich recipe, replace up to half the sugar-and-butter with mashed over-ripe banana (weigh the bananas, reduce sigar-and-butter by same amount as weight of bananas), add half a teaspoon of baking powder with the flour, bake as for a madeira recipe. Simple a bananaey, very moist, sponge cake.
    Flowers come in too many colours to see the world in black-and-white.

      I use a butter cake recipe and add 3 mashed bananas. Very nice and moist!

          My version has a little less sugar, otherwise very similar, but I add the bananas before the eggs and put a little extra baking powder in.
          Flowers come in too many colours to see the world in black-and-white.

            It was quite sweet so will prob use less next time. Am already planning on what to add (walnuts or pecan maybe? yum, or choc chips)

              I sometimes add dried apricots (about the only dried fruit I eat)....
              Flowers come in too many colours to see the world in black-and-white.
