Hi, i have a few rasberry plants and they are swarming with fruit, so we were thinking of making some jam this year, any advice or tips???

I've just blagged it with my blackcurrants and it turned out great. Sugar + Fruit, keep tasting it until it's to your palette then put it in jars...........what could be simpler?My Majesty made for him a garden anew in order

An alternative to raspberry jam is raspberry jelly.
You cook the raspberries in a small amount of water. Strain them through a jelly bag. For every pint of juice add 1lb sugar. Simmer until the sugar is dissolved, then boil until setting point is reached. Jar up.

Add some lemon juice and take the lemon pips and place in a small glass and just cover with water, leave for about ten minutes and then add the water to the jam, squeezing as much of the jelly like stuff from them. this is almost pure pectin and means it always sets.
Its easier and you get a better colour if you make small batches rather than a great big one. The factor is the depth in the pan so the bigger your pan the more you can do at once.
