I always add some demerera sugar to my beetroot and also, in some jars, some fresh, peeled ginger. The sugar, in the main, helps take the edge off the vinegar."We can complain because rose bushes have thorns, or rejoice because thorn bushes have roses."-- Abraham Lincoln

Sorry for hijacking thread But i am about to harvest some Golden Beetroot and was hoping to pickle them but somehow preserve their beautiful colour so the jars look a bit different. Can anyone please reccomend which type of vinegar would be best to use?
