Vegetarian Cookbooks

Hi,
Since I've had my allotment (one year now), I'm finding myself turning more and more to vegetarian cooking. I've got a few books, can anyone recommend any favourites for me?

I like Rose Elliott's books especially "cheap and easy" (used to describe recipes and not virtues!!) and "not just a load of old lentils", although "the bean book" also contains some most excellent recipes. I have a veggie friend who likes her Delia veggie book. You could have a look at the River Cafe books - I believe they do one that focuses on all things veggie. I have one of their others which is lovely. I also have one called "125 best meatless main courses" which has some unusual but delicious recipes, however I think it is out of print.

The other one I use a lot is Charmaine Solomon's "complete Vegetarian cookbook" which has a good range of starter through to dessert recipes from East and West. Even my carnivorous husband likes her recipes except the kasha.

If you are growing your own Veg then we find Leith's Vegetarian Bible by Polly Tyrer is good as it does recipes by veg. Madhur Jaffrey's World Vegetarian is also good for different ideaas to do with your home grown glut of veg.

Must have a look inside those. The Leith's books are huge. I haven't dared looking inside in case I decide I want one and then can't afford it.

Tip - NEVER LOOSE A RECIPE AGAIN

If you have lots of cookery books and find yourself searching through them for a recipe you know is in there - somewhere!
Buy an ABC type address book and write the name of the recipe under the appropriate letter , with the name of the book and page number.

If you keep a folder of your own for cut out recipes - just enter Folder after the description.

There you are. Now you know where all your recipes are.

Aubergine Recipe

Just in case you don't find this one in any of the vegetarian cook books you might like to try aubergine this way.

Cut the aubergine into very thin slices longways
Grill them

In a bowl, mix 2 kinds of grated cheese (the ones you like)
Some pine nuts and chopped olives (if you like them)
Whatever herb you like
And just enough liquid (wine, water, stock) to make mixture a bit stcky

Put a spoonful of the mixture on one end of each aubergine slice and fold the other end over the top
Lay the stuffed aubergine parcels out in a buttered oven dish

Make your own favourite tomato suace and pour it over the aubergine
Sprinkle with grated cheese, breadcrumbs or your own favourite topping mixture and put in the oven for 20 - 30 mins until bubbling all through.

Serve with pasta and salad. Enjoy.

Definately Madhur Jaffrey's Eastern Vegetarian Cooking

also Julie Sahni - Classic Indian Vegetarian Cooking.

Also theres a series of cheapish paperbacks published by Rider, with recipebooks such as latin American veggie, Middle Eastern veggie.

Nowadays I tend to 'google' for recipes there are so many authentic ones, also lots of people keep blogs with interesting stuff on.

Delia Smiths Vegetarian cook book is great, the recipes are quite long but they are worth it. Also The Cranks books a great.

Many thanks for the suggestions, I shall def get the Rose Elliott, I'm sure I've got Delia somewhere - must have a root around, and what a good idea to keep good recipes on hand, I have a recipe scrapbook, I shall start making notes.

Borrowed one of the cranks books from the library.Some really good recipes.

Another one worth looking at, although it may be difficult to find, is "The Art of Indian Vegetarian Cooking" by Yamuna Devi. A huge variety of authentic recipes, everything from soups to desserts/jams and pickles.
