    or try this one? My pal has a fully laiden berry bush - think I'll be visiting her in the next couple of days....

    Blackcurrant Cordial

    Ingredients:
    700g blackcurrants
    1.3kg sugar
    1.7 litres water
    1/2 cup white vinegar

    Method:
    Boil the blackcurrants in 600ml of water until soft then strain well through a sieve or cheesecloth.
    Boil the sugar in the remaining water then add the blackcurrant juice and return to the boil.
    Add the white vinegar and pour into sterilised bottles, overflowing slightly to prevent mould forming on top of juice.
    Dilute to taste with hot or cold water

    Be wary boiling blackcurrants. You may end up with jam instead of cordial......
    Flowers come in too many colours to see the world in black-and-white.

      We have loads of blackcurrants this year and I already made 5 jars of jam. Was wondering how long the cordial will keep.

        oooh I dunno. I found the recipe on the internet but cant remember the site. i wonder if we could freeze it?

          I have half a dozen blackcurrant and elderflower cordial bottles in the freezer. Freezes fine!

            Thought I'd bump this, Jeanied & I have made some...it's very nice . Not all that sure how long it will keep though!!!
