Bread and Butter pickles.....

Had a bit of a glut of cucumbers a few weeks ago so make up some B&B pickles from WI preserve book.

Fancied something to go with tea tonight and decided to open one of the jars to "see what they're like".

I have to tell you they are DELISH, and I mean seriously DELISH!

Am even considering going to local supermarket to actually BUY cukes so I can make loads more!

So my advice is, if you haven't made them before - then this is the year!

Pardon my ignorance, but would that be similar to Heinz sandwich spread? If so please can you post the recipe just in case I get to harvest a cuke this year

A hundred, no a thousand times better than that (IMHO of course!)

Recipe says you should thinly slice them, but not being noted for my patience, i just chopped them! (will post recipe after I've put the animals to bed!)

OK, here goes:

Bread & Butter Pickles
6 large cukes (about 800g) - recipe says thinky sliced but I couldnt be bothered and just roughly chopped them (using my new chopping 'toy' from Pampered Chef!)
4 onions, again recipe says thinly sliced and they just got chopped!
50g table salt
450ml distilled vinegar
175g granulated sugar
1/2 tspn turmeric
1 tspn celery seeds
1 tspn mustand seeds

mix together the cuke,onion, salt in a large bowl. mix well. weight it down withi something like a plate and leave it for about 3 hours.
Drain thoroughly.

combine vinegar, sugar, turmeric, celery and mustard seeds in a pan (I used a preserving pan).

add the drained cuke mix.

put pan on medium-low heat and bring to point of boiling. DO NOT ALLOW TO BOIL. (Don't know why, but recipe was very insistent on that!).

Remove immediately from the heat.

Allow to cool briefly and then pour into hot sterilised jars (I got about 4 medium sized ones).

You can eat them the next day but better if left for a couple of weeks.

Once opened, eat within two weeks (no worries in our house!!).

If left sealed they will keep for up to a year apparently.

We make something called bread and butter pickle that you make up fresh when you want it. Sliced cuces and sliced onions, put into a jar and topped up with malt vinegar. Eat same day - then refill the jar with fresh veg. You can do this loads of times. I would make fresh (ie completely new vinegar) weekly. We always used to make it on hols with the kids.

that made me laugh cos hubby has decided that it is to be eaten...WITH ANYTHING!! So far he's had it with quiche, on a cheese sandwich, and today bless him, he had it with broad bean risotto! don't ask me cos I don't think it 'goes' at all well with risotto..but he assures me that it was luverly!

so have it with whatever you fancy. it's not vinegary at all - more sweet.

Another quick question... Is Distilled Vinegar the same as Malt Vinegar (brown Stuff), I have white and brown available at the mo..

I know this is a really old thread but I thought I would bump it as I made this last year and we just finished the last jar a few weeks ago, I was even tempted to buy some to make more but thankfully I've a glut of cukes again and will be making more today

For anyone else with a glut of cucumbers, I would recommend trying this, it's delicious.
