Preserving Sweetcorn

My crop will be ready for picking very soon, so would appreciate tried and tested sweetcorn recipes, relish etc. Tried freezing it last year but not very pleased with results .... when cooked it had lost its crispness and was a bit soggy.

Don't want to waste a good harvest so would appreciate your help.

Useful thread, Lass, as it all tends to ripen at once and for every one I eat fresh half a doz go over the hill... And for me the best crop ever this year, extraordinary, must be the regular rain. So I'm keen to join you in discovering ways to preserve.

Reading around the topic the way to avoid freezing making mushy is, evidently, to blanch first, then plunge into icy cold water, then drain and pat dry as much as pos before freezing... And freeze in small batches so it freezes as quickly as pos...

On the basis that Mumsy Knows Best (anyone dare argue with that?) I'm going to try the quirky formula on the Mother Earth News site which is basically to cook it in sweet salted water and then dry it till it rattles....Resusitate in milk! Hi Bazzaboy - I tried that method (blanching, cold water etc) but not successful ... will wait to hear if sweetcorn prefers milk!

I just peeled mine and froze. I don't eat the stuff but OH cooked it from frozen and said it was a good as fresh. Tend to find that blanching ruins it so don't bother.
