  • Jam Setting Problem

    I had success with Blackberry Jam last year but this year, while the Jam tastes excellent, it has set almost like rubber and it is very difficult to get out of the jar.

    Can anyone suggest what I may have done wrong and if there is anyway I can maybe reheat the jam and get easier access to the Jam?

    It sounds like you might have over-boiled it, past setting point? I'm not sure if there's anything you can do to rescue it though. What did you use for pectin? Did you use 'jam' sugar, or add apple or lemon?

      I did that one year; sadly I think you are best chucking it. I would say it is likely you overboiled and/or used too much pectin or jam sugar.
