  • Making Pectin

    Mrs Beeton suggests making a pectin using apples. Basically you make an apple jelly, but don't add the sugar at the end. But then she says put it into warmed jars THEN sterilize by boiling in hot water. Am I reading this right, I boil the filled jar?
    Into each life some rain must fall........but this is getting ridiculous.

    Why bother?? If you've already boiled it and sterilised your jars you don't need to stand them in boiling water.

      As it hasn't got any sugar in there it'll need to be steralised to keep it from going off, you're effectively bottling it but need to make sure that you have the right sort of jar so that it doesn't break.

      Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

      Which one are you and is it how you want to be?

          I wouldn't bother extracting pectin to store. I'd make the extract when wanted.
          Flowers come in too many colours to see the world in black-and-white.
