  • Using up eggs!

    Hens are laying like mad (14 eggs today) so I thought I would use some up.

    Bearing in mind, this is Snadge here, who struggles to boil an egg,!!!!!!!!

    I have made two Ham and egg plate pies.

    The gammon in the fridge would never get eaten so used some of that and a dozen eggs. (not struck on quiche, as I like a lid on it!)
    Ones just came out the oven and if it tastes as well as it looks I will be well impressed.
    Tuther one is still cooking and the whole house is filled with a wonderful aroma (says he, harkening back to his Mothers ham and egg pies done in a coal oven! )

    Probably a small step for you lot, but an enormous leap for the Snadge!

    I don't keep chooks but buy a tray of eggs sortof every thee weeks. To use them up I make eclairs and proudly distribute them to family. At least they remember my name lol

      Ok, Snadge - I am in a position to make a serious offer to you for some eggs - just let me know! I can even make you a batch of custard, mayo, or souffle - which ever you prefer - along with a cash offer for some good home produced eggies - just need to do this before New Year's Day!!!

        What about making ice cream? Most recipes I have read call for eggs.

            Scrambled, poached, omelets, fried.... my girls are experts at using all my eggs up. If only you lived down the road there's never any eggs left when I need them.

                Have you a sweet tooth? Cakes will use up a few eggs, and freeze well
                imo, an easy fruit cake is easier than boiling an egg (which is hard to get just right)

                    Pickled eggs - use the vinegar left over from pickled onions! Or just beat them and freeze them in 2's and 3's - great for cakes, scramblers etc.

                      When I get lots of eggs, I make lemon curd Snadger.
                      Home made lemon merangue (? spelling)pie is also good.

                      You can also do a really tasty posh-looking dish by lining a buttered ramikin dish with slices of smoked salmon and breaking an egg into each dish, put a bit of freshly ground black pepper on the top of the egg..cook for about 15 mins in a moderate oven on a baking tray....one per person as a starter with some salad, or 2 each for a main course with salad and baked potato

                        Thanks for the offer Jeanied but the eggs are coming intermittently at the mo....and I must keep my regulars happy. 14 yesterday but only 8 today, who knows tomorrow?
                        What I do at the mo is leave a few in my honesty box overnight then if they aren't taken I take them myself the next day and put fresh ones in.

                        The pies were lush btw so will deffo make some more!

                          i was wondering if there was something wrong with my girls too as i'm getting between 6 and 8 eggs every day - that from 9 chickens that lay! i was shocked as i thought they would have gone off the lay by now too. been frantically trying to use up as many eggs as possible - failing badly though!

                          so far made: ice cream; mini pavlovas; bread with egg in it; cakes; muffins; fried, boiled, etc, etc...

                          would love recipe for egg and gammon pie please snadge.....

                            err......chopped up gammon mixed with eggs & seasoning .........in a basic pie crust of flour lard/butter and a we drop of milk! No idea about quantities I just made it up as I went along. Pastry was rolled that thinly I could nearly see through it. Half an hour in oven at 170deg.

                            My ISA browns that I bought last year layed all through the winter. As long as they are well fed and watered and have a dry coop yours should do the same...........after all, thats what they are bred for.
                            My 3 & 4 year olds are now laying after a quick heavy molt but, naturally, not 100% like they did there first year. Thats why the battery farms abandon them after there first laying season!
