  • Freezing leeks

    Hi there.
    I have had a bit of a glut of leeks and am now eager to clear the space they are taking up and get it ready for planting out different crops. I was wondering does anyone know how well leeks freeze ? Would I have to blanche them first ?

    Dunno how well they are supposed to freeze, but we had a load left over after winter that were starting to 'flower'. So we dug them up and chopped them into slices, put them in a box and into the freezer - very tasty they've been.

      I find that they're a bit slimy after freezing, fine in caseroles / soup but not much good if you just like them fried in butter. Mind you,still better than throwing them away

      Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

      Which one are you and is it how you want to be?

        I don't blanch veg for the freezer. I would just slice them and freeze them in a bag or box, and use for casseroles, soup, or my special favourite potato and leek gratin.

          If they aren't flowering, dig them all up and heel them in a corner somewhere and then you can reuse the space.
