  • strawberry fruit leather

    I made a few of these fruit leathers last year and they went down a storm - so much so that they are on this year's 'request' list from the kids.

    I've grown some strawbs in the GH and they are now starting to ripen - maybe 5 or so a day. Not enough for a leather but was wondering how best I keep them till i have enough.

    Should I just chill them and pop them in the freezer?
    Or mash them down and then freeze them?
    Or something else?

    Never having made fruit leathers before, I'm not sure, but surely if the end product has been cooked and dried (which I think is the process - please correct me if not), then mashing them down and freezing should be ok.
    At least when I made some mixed raspberry-plus-raspberrylike-berry jam earlier this year, i used frozen mushed up rasps. (garden ones, not shop bought!)

        Pureed,flattened and then dried fruit.
        You can buy them in Health food shops.Usually have an unappetizing brown look to them(like leather) but the taste makes up for the looks.

        I've got a recipe for a pumpkin one...I WILL try it out this year.

          Alys Fowler from GW did them on her recent series, The Edible Garden on BBC2. Don't know if it's still on iPlayer.

          She spread her puree out onto silicone sheets to dry in a dehydrator and then broken them up into small piece when dried out. Didn't look too brown. Probably a recipe in her book unless they've put it into the BBC recipe database.

          From memory (not so good these days) think she said you could do them in a low oven overnight.
