  • Strawberry ideas, please

    We've got more strawberries than we can eat and I've already made;

    strawberry jam
    strawberry and rhubarb jam
    strawberry icecream

    so, would welcome ideas, asap please, to use another bucket full.

    Has anyone made strawberry syrup or strawberry wine? If so were they successful and what recipe did you use?

              Strawberry Syrup

              Heat a quantity of strawberries in a pan to extract the juice.
              Strain through double muslin.
              Io each pint of juice add 3/4 lb sugar.
              Heat gently, stirring until the sugar has disolved.
              Bottle to with in 1 inch of the top of the bottles.
              Allow to cool
              Sterilise.
              Stand the bottles on a trivet in a deep pan with the caps loose.
              Fill with cold water to within the depth of the cap.
              Bring to the boil and simmer for 20 mins.
              Remove bottles at once and tighten caps.

              Stored in a cool dark place will keep for a year or two. Lovely poured over ice cream or added to plain yoguort.

              Strawberry Liqueur

              500g Strawberries put in a large jar (1.5Ltrs)
              Add 100g Sugar.
              Cover with Vodka or Alchol pour Fruits
              Shake daily until the sugar had disolved
              Leave for 6 weeks
              Strain through double muslin
              Bottle
              Tends to throw a sediment so may need straining again after about a year.

                I've made strawberry wine, nothing special about the recipe, 3lb fruit, 2½lb sugar, yeast nutrient, a little lemon juice.....
                I've also made Strawberry Vodka.
                Chop or slightly mash some over-ripe strawberries, cover with sugar (about half the weight of the strawberries) and leave for a few days; you should have a pink syrupy liquid, which you can strain off and dilute with equal volume of vodka (up to 2 parts vodka to 1 part syrup, to taste), ready to drink, or keep until Christmas!
                Flowers come in too many colours to see the world in black-and-white.

                      Apart from the aforesaid if we have any strawberries left over I just smash them up with sugar and freeze. Lovely on homemade cheesecake or flan.

                        I can vouch for the Strawberry Voddy! (Hic!)

                        I made some two years ago, and opened it last autumn. A friend who doesn't usually drink polished off the last half bottle. Woke up without a hangover too! (Cow!)
