I have just made a batch of gooseberry and elderflower jam. Now seeing as there are no elderflowers about I just used the cordial I made last year and froze. I cooked the gooseberries in the cordial, reduced the amount of sugar by half and doubled the lemon juice. The result a gorgeously perfumed, tasty and not too sweet jam. Yum yum give it a try.
