  • Simple recipe for pickling gherkins wanted

    can anyone recommend a simple recipe for pickling gherkins?

    i've seen a couple of recipes on here for carrots and courgettes - can the same techniques be applied?

    I found a couple of recipes in old books but they resembled more like the old method for bottling fruit (filling jars and heating them slowly for a long time in a hot water bath). I was hoping for something a bit more straight forward!

    Same techniques can be used for gherkins as for courgettes. I always pickle with cool vinegar, otherwise you end up with cooked vegetables.

      Yes, pickling vinegar is pickling vinegar (adjust the spices to your own taste). I buy Tesco white distilled vinegar which is about half the price of Sarsons' Pickling Vinegar (and add my own coriander, peppercorns, mustard seeds, chilli etc)

        thank you to both for your suggestions. I had been wondering about which vinegar to use as well as I use malt vinegar for my pickled onions and red wine vinegar for chutney. don't think either would work for gherkins!!

          White vinegar should be fine, or you can get white wine vinegar or cider vinegar.

              my recipe for gherkins is.
              1 pint of white wine vineger
              corriander seeds
              chillie flakes
              salt
              pepper fresh dill
              and 2 teaspoons of brown suger.

              put the viniger,suger,chillie,salt,pepper and corriander in a saucepan and bring to the boil.gently simmer for about 30-40 minutes.
              leave to cool
              quarter the gherkins and fill the jar
              pour over the vineger and add the fresh dill.

              stash them away for chritmas.
