  • Runner Bean Pickle Question

    I pickled runner beans a couple of weeks ago. I cooked the beans in boiling water for a couple of minutes before pickling.

    Somebody has now told me that I should have fully cooked the beans - for at least ten minutes and that they won't be suitable for eating.

    Can anyone tell me - is that true OR will the pickle be OK?

    I have a recipe for runner bean chutney and it says to cook the beans till tender. Are they just in spiced vinegar? I never cook my beans for that long anyway.

      I've never fancied pickled beans but do like the sound of the bean chutney.. I will pass it on to my sister as she is better than me at making chutney and the like.

        Yes, they are just in spiced white vinegar.

        I'd love to have the runner bean chutney recipe please.

          fresh green Runner & French beans need cooking properly, to kill the toxic lectin. The mature seeds inside (aka kidney beans) need a more thorough cook because they contain more of the lectin.

          A few uncooked beans probably won't hurt you, and I only boil my green beans for 5 mins. I have had lectin poisoning, from uncooked kidneys and it's really horrible: painful stomach cramps

                I feel absolutely stupid asking this question - but when I open the jar, will I know if the beans are cooked enough (as in, if they're soft)? And if they seem to be not cooked enough, could I then cook them for another while? Sorry, everyone, but this is really exercising my mind at the moment.
