    Wild Plum Chutney

    3lbs/1350g wild plums/damsons
1lb/450g cooking apples (cored & skinned), chopped
    1 lb/450g onions finely sliced
    10.5 ozs/300g dried apricots (optional)
    7 ozs/200g sultanas
Half lb-1lb/225g-450g of soft brown sugar, depending on how sweet your plums are
    2 cloves garlic, crushed
    1 tsp of cayenne
    2 tsp of salt
    1 tsp of allspice powder
    1 tsp ground ginger
1.5 pints/750 ml white wine vinegar
1 small hot chilli (more if you like)
    2 tsp of balsamic vinegar

I'll be making this with cherry plums, the fruit is just starting to drop now

That sounds nice T_S - might give it a try if the wild damson/bullace crop is good

dunno yet SR ... it's too wet to pick plums today. I usually get 5-7 jars out of a batch of chutney
