Made some chilli jam the other day with finely chopped chilli's. Made some green tomato marmalade the other day with strips of lemon rind.
Hadsome jalapeno's which I gave to my Son to cook with. He forgot to pick them up and they have ripened to a rich red in the bag.
"What can I make with these?" ses I.
Had a rummage around in the freezer and found some frozen apple juice
I cut the jallies into thin strips reembling marmalade strips, boiled the apple juice up with sugar then 5 minutes before it was finished i added the shredded red jalapenos.............wallah Jalapeno marmalde! The strips actually stayed in suspension so it looks the part (like blood orange marmalde) and tastes adorable (Tried it on a cheese sarnie today.........well impressed!)
