it's about 4lb or 2kg apples [ my pan will only hold that much ]
chop and cook the apples with enough water to just cover, then into the water add
5 - 10 cardamon pods [I put in 5 to begin with, then chucked another 5 in after a few minutes because i felt like ]
10 cloves
1 tsp ground ginger
1 1/2 tsp cinnamon
3 tsp mixed spice.
Simmer until mush, the strain the juice off
Add your preferred quantity of sugar, I put in 1/2 to 3/4 lb to a pint because I don't like it that sweet.
Boil to a setting point, jar up.
