Excess Garlic

Hi All

I grew excessive amounts of garlic for some reason - can it be preseved in some way?

There is a recipe for pickled garlic in the river cottage book but I never have much luck following the recipes in there , they always seem to go wrong.

Garlic usually keeps well when made into a string and hung somewhere cool and airy. Any particular reason why you want to preserve it some other way?

I've picked garlic this year, really tasty it is too, a softer milder flavour than fresh but very good. I didn't use the RC recipe but do find that all the recipes in there are fab - which ones have you had problems with, I've found them pretty reliable?

I find they never make the quantities that it says - always seems to be a lot less.

Having said that I did try and make the pickled runner beans last night but they ended up looking like something that our biology lab used to have in the cupboard ( i think it was tapeworms ) - I just couldn't face them so they got chucked!

Take it you've not done the glutney then - that made so much I couldn't fit it all in my maslin pan! Other than that they always seem to be about right, but some of the recipes do quote against smaller sized jars.

well I did make the seasonal chutney - it was still a bit too runny so I put it back in my pan to rescue it and ended up burning it to a crisp ......

I'm going to do the rosehip syrup when I get my new mouli.

Is there such a thing as too much Garlic?

only if you are a vampire .. there are only two of us and I-PIG and cats don't really do garlic as far as I can gather ( although he likes curry/chilli for some reason).

I'd like to to be able to plait it up but when I tried it looks like a 5 year old had done it.
