storing Garlic?

does any one know ways of presserving galic!
We had a really good crop last year, but now it's going soft and shoots are starting to grow.
I am posting this in the right place?

We've not had this problem yet but we are growing a lot this year. I understand you can chop it and preserve in olive oil in a jar, or mince it and freeze in ice cube sort of portions. If you do it in oil, you can add chopped chillis and peppers too for a variation.

I think that when your garlic starts going soft and shooting it's God's way of telling you you aren't eating it fast enough!

It appears that storing in oil might be quite harmful to your health!

Might try drying and crashing it this year!
Dont want to go down the 'stroing in oil route' to much of a worry!!
