Can you freeze cheese?

Perhaps an odd question but the OH has just phoned me from Makro to say they had 5 kilos of cheddar for £13. That's £2.60 per kilo. Only trouble is the sell-by date is Friday. Now we use a lot of cheese but not that much. I took a chance and told him to go for it as I hope it will freeze. Last month he got 20 packs of butter for £10 and it seems to have frozen and defrosted again without any ill effects but I'm not so sure about cheese.

Anyone have any advice or am I making the world's largest macaroni cheese this weekend?

Yes you can.

It does freeze but goes a bit crumbly. I used to buy the big blocks, cut them into usable sizes. cling wrap and bung them in the freezer in another bag. No probs

Yes but cut it into the size pieces you can use in a week.
Defrost in the fridge.

I always freeze cheese (can't get Cheddar here so I usually bulk buy when they have it at Lidl) Anyway, it freezes well but when it is defrosted it tends to go crumbly. Great in sauces and cooking, I don't mind eating it crumbly anyway.

Great price on the cheddar! It does go a bit crumbly when frozen, but maybe a brief zap in the mikey would hold it together better???

Good thinking TS - I have one of those as well. Only problem is I also have a younger version who finds grated cheese irresistable. I can be in the middle of making cheese sauce and turn round to add the ready grated cheese only to find half of it missing - he is a fridge foraging ninja.

grating is apparently better for you, it digests a lil better and of course you do eat a lil less as well than you would door stop slice sizes

JUst thinking... You get al those frozen ready meals with cheese on don't you? Like frozen lasagnes and pizzas and the cheese always cooks. Never tried it uncooked once defrosted though, but now i'm goiing to try it.

grate it before you freeze it then it doesn't matter if it's crumbly!

We always stock up on good cheddar and stilton when in the UK and freeze it back here. Yes the texture becomes more crumbly but we still eat it as part of a cheese board as well as cooking with it. The texture of cheddar out the freezer is really good for mixing with cream and garlic and then stuffing in chillies. Maybe that's a waste.

One problem with that Blue Stilton freezes O.K. but it is non too easy to grate.
