      Frozen chillis will last quite a few years without any real drop off in heat or flavour
      I blitz mine in a processor and vac pack and freeze this tends to stop ice crystals forming
      Read on twitter today that a highly regarded chilli company was making some new products with 2 year old Jolokia chillis which were frozen.
      Also just got myself a stockli dryer so I can get a slightly different flavour from the same chilli

        Bins.......you are correct but I find it much quicker to get the result. Drying naturally in our climate is a bit hit and miss.

        Besides you cant make fruit leathers with a pin and string. I've dried foraged chanterelles recently too!
        I know you can't .......I too have a dehydrator . Just saying chillies can be done without ....

          Anyone tried smoking them?, when I finally harvest my conservatory crop I'm going to smoke them over oak chippings.
          Eat well, live well, drink moderately and be happy (hic!)

            I was wondering about the chill scenario too, as I have an abundance of Krakatoa and Scotch Bonnets and will have Jalapenos soon......... I tried leaving some on a saucer in the kitchen but they've stayed soggy, is that right???
            I don't really want to go out buying a dehydrator so I will probably try the hanging process......

            But just to check, should they go hard or still be bendy when dried out? I wanted to try and make a concentrate and freeze it so I could get (maybe an icecube size bit), add it to tomato sauces etc.... Would that work?

                rusty, the Krakatoa I have a mixture of red and green ones, the OH says they're hotter when green, is this right cos I've always thought it was the other way round???
                The scotch bonnets are all still green, again same question regarding those?

                  Chillies generally start off green then turn colour when they ripen and are hotter when ripe and when dry are hard so probably won't bend very easily...
