    If you don't boil it for the 10 minutes you get a Chilli sauce rather than a Chilli Jelly so 10 minutes is the minimum for setting.

      Well I think I'll try a 4 minute boil for the next batch and see what I end up with!

      I think I need to go and stare at my chilli plants in order to will the next lot to ripen!

        I find jam sugar to be completely useless (and the 4 min thing also useless).... I just buy normal granulated and sachets of powdered pectin and add where necessary. I use lots of sugar as you can imagine.....

          I'll have to have a look for the powdered pectin. I had a little google the other day but I got confused with all the different types!

            I just buy the Tate and Lyle stuff from the wholesale place (can get it in Sainsbugs, Morrisons, Asda etc)

                If stuff doesn't reach the right temperature it'll never set no whether it's boiled for 4 mins or 10 mins......I use pectin powder or make my own pectin stock . Jam sugar is way too expensive......you need a certain level of acid and pectin to achieve a good set .
