Hi I have a lot of spring onions is it possible to pickle them ?

It certainly is, Bumblecat. Most common way is to top and tail them so they're long, rather than slicing them up (although that's OK too). Then stand them up in the jar, cover fully in pickling vinegar, or plain vinegar with some peppercorns, hardy herbs or similar thrown in. Will be delicious after a few weeks.
