Unbelievably this year my peppers have given me a generous crop. I usually get some green ones at the end of the season which I use in salads or freeze for curries but this year they have actually ripened to red and I will have a few trays full.
I need to preserve some. For the first time this year I successfully roasted and froze tomatoes with garlic, basil and olive oil . Can I do the same with peppers?
I have heard of people packing them in jars of olive oil but others saying they go slimy.
Has anyone got a foolproof recipe?
