  • Rhubarb Jam

    Just made some Rhubarb Jam for the first time made with
    (2lb) of Rhubarb
    (2lb) Sugar
    1 full Lemon, rind only

    Its very sweet and only got 3 jars
    is this about right
    I think I might have put too much sugar in
    and can someone please tell me an easy way of getting it out of the pan and into the Jars
    yes its all down the outside of the jars too Best clean it up before Mrs D sees it
    Some things in their natural state have the most VIVID colors

    I scoop jam out of the jam kettle with a pyrex jug and pour into jars placed on newspaper (to absorb the drops.
    Much less messy than soup ladles imo...

      Hi,
      I might be being thick but can you tell me exactly how you didi it. Cook in water first etc.

        Hi Debsducks,
        Mr D says he just peeled and chopped the rhubarb (from the plot), then put it into a pan with the sugar and lemon rind (from the mini lemon tree in the lounge), then just put it on a low heat until the sugar melted, then boiled it up, no water or anything else!

        Must say it smells divine, tho the jars are a bit sticky to say the least!

        Just had my first taste, very thick, very sweet and very nice, rather like a sweet rhubarb marmalade, very brown but very yummy and sticky!! Methinks he's gonna be making some more of this!!!

          Hi, many thanks for that.
          Just made two rhubarb crumbles but still got more rhubarb to pull so as they forecast it wet yet again tomorrow i think thats the next job.

            Sounds like a good recipe for rhubarb toffee to me! Are your teeth stuck together?

              Hi LJ, thanks for the info! He got just about 3 jars from 2lb of sugar, so the mix sounds about right, tho it is a bit like sticky toffee, cant wait to try it on toast tomorrow morning! Mind you, I think it could work well with some vanilla ice cream tonight too!
