Cheese & tomato mufins

Hello. I haven't made these yet, but I thought they would be a great way of using up lots of fresh tomatoes. It's the sort of thing I make in vast quantities, freeze individually (ie on a tray then bag them up when they're frozen, so they don't all stick together) then whip out one at a time for the children to take to school for snack.

The recipe uses sundried tomatoes - so I guess you'd need to get that bit sorted first - perhaps they'd need to be oven-dried in our climate
