In Slovakia people eat vast quantities of pickled cabbage, which is shredded and fermented in large barrels. But it seems to be always white cabbage. I once went to a cabbage festival where people were buying it by the dishful and eating it plain with a fork.
I'm not fond of it that way, but it's very tasty in sour cabbage soup, particularly in the special Christmas soup called kapustnica (say it like kapusst-nitsa).

Red cabbage is popular too, but is usually not pickled but braised with vinegar and other ingredients to make a sweet and sour vegetable accompaniment for meat. Here's a recipe for that :

There are some local varieties of red cabbage seeds available here. I could look out for some and send them to the VSP if you're interested.

Personally, I like the taste of braised red cabbage, with a bit of balsamic vinegar, and you can add some cranberry sauce if you want it a bit sweeter. I eat it with pork and potatoes. Nice.
But if I was going to pickle it then I'd make sauerkraut because of all the beneficial microbes, see here and you can use red cabbage for that too.

I have two mahoosive red cabbage plants which I should have entered in the vine show because they are the size of footballs!
I'll never be able to eat both so I intend giving one of them to a friend but I was wondering what to do with the other one?
