This year my Morello Cherry tree is laden with fruit, to such an extent we have had to support some of the branches and I'm not even begrudging the blackbirds a share.
I one tried a few years ago to make jam with the fruit and was unsuccessful. It would not set.
However due to the glut of fruit this year I have had another go and it is amazing.
Here is the recipe, so simple
Equal weights of pitted sour cherries and jam sugar.
Put the cherries into the jam pan and heat gently for 10 or 15 minutes. Put the stick blender in and zap most of them.
Add sugar.
Bring to the boil and boil to setting point. Mine took 7 minutes.
It is now my husbands new favourite jam and it is really good in a Victoria sponge.
