Hi, I am new to wine making and we are having a go at gooseberry wine due to the abundance of fruit on our allotement.
I read on a post someone referring to the main fermenting period and I am asking what this bit is. Is it whilst the fruit is in the fermenting bin prior to being strained into demijohns?
On that post it said during this period there should be very little air in the bin. My gooseberries are sealed in the fermenting bin at the moment but theres only 4 litres of liquid in a 10 litre bin. Will this therefore not work?
Also do we need to put the liquid in a demijohn for the next stage or can it go into wine bottles?
