hi all i have a load of onions,carrots potatos and garlic which im going to dig up this weekend and i have always fancyed making a chutney out of some ,does anyone have a recipie ? any thoughts welcome cheers

That's a tricky one! Onions are one of the main ingredients in chutney, but the spuds and carrots aren't. Chutneys ( or the ones I make!) often have a fruit in such as apples, rhubarb, plums etc and for the veg - onions, beetroot, courgettes. Cooked with vinegar, sugar and spices. I've never used potatoes or carrots. Though I've a recipe for carrot and almond conserve or a jam if you fancy giving that a go.

Again not using potatoes, but most other veg can be used to make Italian Pickled Vegetables - Giardiniera. They pickle everything left in the garden at the end of summer eg carrots, green tomatoes, cauliflower or broccoli, green peppers etc.
This recipe uses cloves and peppercorns, I put dill (fronds or seed) in mine you can also add garlic and/or chilli if you like hot pickles.

Just got home and found this for carrot chutney
16 fresh carrots
1.8 litres water
2 lemons
220g sugar
brandy (optional)
Peel and grate carrots put in pan with water,bring to boil and simmer till soft
put in blender until pureed,add rind and juice of lemons
return to pan add sugar.
bring to boil till setting point reached
stir in 1 tablespoon brandy for each 450g
jar up
More of a jam than chutney though

You could make a potato, onion, carrot and cheese hot pot too. Slice all thinly, layer, dot butter salt and pepper through layers. Add cheese too and a little milk. Shove in oven, once it's soft it's ready. Really tastyYou may say I'm a dreamer... But I'm not the only one...
