Hot jars, hot filling then cover while still hot . As the filling cools it creates a vacuum which should seal the jars.

Like the sound of the red onion marmalade will give it a try over the weekend, still have loads of red onions left. Honey burns very easily but you can substitute 10 - 15 % of the sugar content with honey and add it after the sugar has dissolved.S*d the housework I have a lottie to dig
