  • Marrows and potatoes

    Right
I've got lots of marrows, kindly donated, now have 4 giants and loads of potatoes and onions, any idea on recipes that would use all three?

Fry the marrow and onions (chopped or sliced) and layer up with goats' cheese (love the stuff) in a big dish. Top with sliced potatoes. Drizzle with a little oil or dot with butter. Cover with foil and bake in a med/hot oven till the spuds are soft. - probably an hour ish.

ooh.. i like the sound of that one flummery!

i mentioned this on the marrow thread, but nigel slater's courgette and potato crumble (with marrow in place of courgette!) is fabulous, as are all his recipes. i can't remember it exactly (but could copy it out if you want it). basically fry onions in butter, add potato and marrow, fresh rosemary and a little bit of stock (and if you have it - white wine!). cook for a couple of minutes. put in a dish, and add some cubes of crumbly cheese (cheshire works well). make the crumble topping with breadcrumbs, more rosemary and more cheese.

Spanish Omelet (also called Tortilla???) that definitely uses pots and onions with the addition of grated marrow.

Sorry to take ages to reply, been on holidays...on allotment.. but have put aside Friday for tackling the marrows. Great ideas will go and get goats cheese and crumbly cheese to try them out.
          best wishes
