We were served this as part of our dessert last night...

it was refreshingly tasty, sprinkled with chopped fresh mint and served with a slice of sticky chocolate cake.

well worth mentioning and trying out!

I made something similar but used Chioggia beets instead, big mistake it came out pale pink in colour so didn't look very appetising.
