What to do with those onions?

Now our local horticultural show is over, I'm left with about 16 very large onions (kelsea). Any ideas on how to prepare them for freezing (or other method) since I'm not sure that they will store too well?

Hi Helensusan,

You can just chop or slice onions, bag them and freeze them although be careful what you put them next to as the smell may affect other foods.
Or how about making a nice big batch of onion soup? Yummy!

According to my book "Will it freeze" you can chop onions and put them straight in the freezer for later use. I haven't tried it yet though as most of mine are strung up. Alternatively use them on things like onion bhajis, curries, stir fry, stews etc.

Onion mush sounds great, I love Nigella.
Onion Marmalade is gorgeous too although i've only ever made it with red onions.

Oh! there's a recipe for onion marmalade on here too! I'd like to try that, but I've not done any as we didn't grow enough!

I would imagine you could dry them, but not too sure what they would be like when re-constituted? I wonder whether they would discolour as well?

I'm using a quantity of mine as we speak - I'm cooking a big batch of crab apple and damson chutney. I made it last year to get out of a mistake! I made some apple jelly with wild apples which were so bland that they jelly had no flavour. I melted it down again with cooked damsons, onions and raisins and spiced vinegar and it produced the best chutney I've ever made. So I'm making it deliberately this year. I always use quite a lot of my onions in various chutneys. I love them. However, Himself doesn't and he always hates coming in to the smell of boiled vinegar when I've been making it. Must think of something to distract him this evening!
