As requested here is our family recipe for salted chilli chips.
Just about everything can be grown in the garden so it's basically a free meal. And it's really easy - just cook until you think it's about right and you can't go far wrong.
Ingredients for 2 people are just:
5 largish Potatoes - or more if you're hungry
1 largish Onion (white or red) white is better I think
1 or 2 Garlic clove
2 chilli - we like it quite hot
2 peppers - red and yellow (though only half of each)
salt
1. Cut chips quite large and cook fully. Skinny ones don't work. Frozen chips are great too. - they need to be quite fluffy.
2. Dice onion and chop garlic finely.
3. Add oil (we use rapeseed) to a wok and fry the onion and garlic. - about a minute or so
4. Chop chilli quite finely and add to wok - for a minute or so
5. Chop peppers into 2 inch strips and add to wok. - for a minute or so
6. Add all chips to wok and mix well while on the heat - for a couple of minutes.
7. add salt just before the end of the cooking process - you'll have to experiment to get the taste you like - we used way to much to start with - a tea spoon is usually enough.
8. Serve.
Note: For those who can't eat vegetarian food just add crispy bacon bits.
