Recipes for a negligible amount of redcurrants...?

My redcurrant Bush has cropped for the first time, which has left me with about a large handful of gorgeous currants.

What to do with them? I'm hoping next year to have enough for redcurrant jelly, which I can't live without, but until then...

Add them to a summer fruits pudding.

Make a little coulis out of them and use for a sauce on some meringues.

I didn't, but I do too! I'm off to pick my black currants tomorrow, if the birds haven't helped themselves to them, and I will also be buying some meringue!

Easy, but time consuming. Plus I can't leave the oven on unattended. Little fingers tend to like twiddling dials...

I know, I know... it's terrible really and I do prefer home made meringue. I'm just in a frenzy trying to get the plots on track, prepping and planning for my family coming over to visit next week and... sometimes it's ok to buy them ready made too
