  • Hawthorn Berry Recipes?

I take Hawthorn Berry capsules for my blood pressure but have often wondered if it’s worth including berries in a jam or something. I seem to remember Hugh F-W used them in a ‘ketchup’ in one of his series’. Anyone used them in cooking?

I seem to remember I once used them in wine. Can't remember if it was drinkable.

I got a book from the vine when I was the Member of the Month, The Edible City, a year of wild food, here is a suggestion from that:-
Mixed fruit elixir...………...or cordial ……………….or syrup
      From any of the following:-
Rowan, cherry, plum, sloe, hawthorn, medlar, quince, crab apple, pear, rose hip, elderberry. Chop, squish, put in a saucepan in water and cook for 20 minutes with cinnamon, cloves, star anise, and a little sugar, honey or xylitol. Cool then strain through a muslin squeezing all the juice out. Use mixed 50/50 with fizzy water or re-heat and add more sweetener to make a cordial or even more to make a syrup. I have not tried this...………….

I made hawthorn berry ketchup last year, a tad fiddly separating the stalks off the berries but so so worth while.
It tastes wonderful and goes with so many things

Will definitely give the ketchup and the ‘elixir’ a go, but probably not ready to try them raw - although my horse is partial to them that way

He made it, just after the gathering! ( by that time I’d had more than enough of tree hugging hippies and foraging. I’m guessing only you will understand that comment VC ).
He’s quite a good cook. He has to be or he wouldn’t get fed quite regularly .

I understand completely, SP. I would have felt the same.!! I'm an antisocial witch too.

Some hawthorn berries taste nicer than others. If you find a good one its worth remembering where it is for the future.

I've never tried making this but I have a huge tree in the garden so will have s try.....though I have used elderberries to make pontac sauce? That is also fiddly but does get used in casseroles etc.

Robin Harford over at eatweeds.co.uk has published these two recipes:

                          https://www.eatweeds.co.uk/hawthorn-jelly-recipe
                          https://www.eatweeds.co.uk/fermented...-relish-recipe

I've not tried them myself - I was just made aware of them in his newsletter the other week
