You have to try them raw as you'll never know if they are eating hawberries or cookers. I know this might sound weird but the hawthorn is essentially part of the apple family and like apples, they have quite a wide flavour composition. Some are sweet and some well they are virtually inedible. Pluck it and suck the fruit off the seed inside it will taste just like a mini apple. Try a variety in your location to find the one you want to use, I have about 8-10 I will pick from some are like a russet apple very floury and others more granny smith like.
My favourite recipe is hawberry gin as it tastes like toffee apple.
Pull the preferred berries off the stalks and rinse before weighing and adding 1/2 their weight of granulated sugar, cook on the stove until soft they go like stewed apples, add to a large open neck bottle or bottles dependant on volume with equal quantity of a proprietory gin. Leave for about 2-3 months on the side in the kitchen and agitate whenever you pass by and remember. Sieve the contents, then pass through a coffee filter and coffee machine or simply pass through a muslin cloth whichever is easier for you. It takes about 12 hours to work it's way through a coffee machine and you might have to swap a filter or two. You are left with a golden coloured liquor which tastes of toffee and is a lovely christmas tipple.
