  • Chilli Jam / Chutney Question

Been looking at recipes online and every one I can find (for Chilli Jam at least) say will keep in the fridge for a month or two. Why is it different from normal chutney - which keeps for 12 months in well sterilised jars?

Can any chilli experts enlighten me...and maybe suggest fave recipes?

This recipe says it keeps for 12 months in a cool place or a month in the fridge once opened. Most storage recommendations change once the seal is broken.

I make a chilli jelly with a crab apple or apple base. I also make a grape chilli jelly.
Just make a jelly as you would normally. Add the apples/ and a few chillies. Boil up with water. Strain through muslin. Make jelly with juice and sugar and chuck in either while chillies for flavour or chopped pieces. I add some red or white wine vinegar to give it a little punch.
The nigella recipe keeps for year easily -

Great, thanks - I’ve just been out today picking crab apples so the jelly with those as a base would use a few of them up (picked up far more than I need as usual)
