As a special request....
350g mixed dry fruit
100g sugar
100g butter
150ml juice /cidre/booze mix!
2teaspoons vanilla essence
1beaten egg
225g SR flour
put the top 5 ingredients in a pan and simmer with lid for about 20 mins until the fruit swells up.
allow to cool
add egg and flour and stir in well
Cook in 150C oven for up to 1 1/2 hrs depending on oven.
(Its not a heavy Xmas type cake )
I will add a good handful of chopped crystallised ginger, or use apple juice and cinnamon or mixed spice to taste...or orange juice and zest to taste. Anything really to boost the flavour . The more dry ingredients you add ( like coconut ) you'll need to add a splosh more liquid so it's not too solid.
A bit hit and miss, but I've even added chilli and cocoa and it's yummy. I don't think I've ever made two the same!
I might try treacle in the next one!
I do tend to make double quantities, then cut in half and freeze one half
Just the basic ingredient is yummy-espesh served with a chunk of butter and cheese on it!
