Sweet chestnuts

    Hope you find some chestnuts soon.

    I was given this recipe as I was given a butternut squash and didn't know what to do with it...... now I'm on a hunt for chestnuts

    Roast wedges of butternut squash with olive oil gm6 for 15 mins.
    Meanwhile, nick tops of some chestnuts and boil for 2-3 mins and then peel.
    Add chestnuts, some smoked bacon, a dash of olive oil some fresh sage leaves to butternut squash. Roast altogether for a further 20 minutes or until squash and bacon are cooked.

    Enjoy!

      My favourite is Mont Blanc, French cake made with chestnut puree.

      You need: chestnuts, double cream, sugar, milk, sponge cake or meringue and rum or brandy (sorry, I don't use exact measurement)

      Peel and cook chestnuts in milk or water (milk should just cover the chestnut) with some sugar. When the chestnuts are soft make it into a puree (I use a hand-held blender for this). Leave it to cool and mix in some brandy or rum.
      Whip double cream with a little bit of sugar (don't put in too much sugar!) until stiff.
      Now pile the cream on sponge cake or meringue, then pile the chestnut puree on the cream and smooth the surface over. Chill in the fridge and eat! You only need a small portion of this - it's rather rich.

      It's absolutely heavenly with a cup of strong coffee.

        definately going to have another go at storing chestnuts this year
