Stuffed loin of pork with carrots and roast potatoes with a nice carrot water gravy. Stuffing made with my own parsley, thyme and lemon thyme. Made with salted french butter and some nice onion.

Baked eggs in a tomato chorizo bean and spinach sauce with crusty bread

I have to comment on this......

Eggs nearing the end so needed to use, chorizo use by Feb!, cheap tin of toms, tin of beans in the cupboard for about 6 months, spinach from the freezer (bag of blocks/portions). Bread was purchased today.

Best meal I have had in ages, the chilli flakes rounded it off

Last night was ham and mushroom omelette, jacket potato and home made Waldorf salad.

Tonight scampi with tartare sauce, potato scallops, carrots and peas.
