Cooking/freezing sweetcorn.

Yesterday I was debating how much of everything to grow next year. I love fresh sweetcorn. In years past I used to freeze full cobs. They were okay but nothing like fresh and they took up lots of space in a freezer.

Does anyone freeze just the corn ( without the cob) successfully? If so do you cook them first ( on or off the cob)?

I would love to have sweetcorn in the depths of Winter but only if is tender, sweet and doesn't take up a whole freezer.

As soon as you pick sweetcorn the sugar begins to turn to starch, I would suggest cooking immediately then freezing would give you a better chance of keeping some of the sweet flavour. Never tried it as I always eat my sweetcorn raw whilst standing next to the plant in the greenhouse.

Ive never tried freezing the corn off the cob separately,it must work out the same,I’d blanch them for about thirty seconds give them a shock to stop them getting starchy & straight in the freezer. Ive stored some cooked cut corn in a bowl in the fridge for about a week or so,good for adding to everything.

Yes we blanch, then shed the kernals before we freeze them on a baking tray to prevent clumping. The next day transfer from the baking tray(s) to bags for longer term storage and later consumption.
When I say 'we' I mean mainly Carol, a sharp knife down the cob gets the kernals off efficiently without resorting to another specific machine that takes up room the rest of the year.
Pick at the optimum and freeze straight away. Lovely.

Hi, I steam them in the microwave.. un-shucked.. I've found it the easiest and tastiest way to cook them. I guess you could do this then freeze them instead of peeling.
I cant see they'd deteriorate too much in the freezer and wouldn't need wrapping!?
