Uses for woody beetroot

Hello,

Just pulled up the beetroot I was unable to harvest last year.

The top of the roots have gone a little green and I assume they will be rather woody, might they still be edible? If so, are there any recipes to make good use of woody beetroot?

or Leave them in the ground to go to seed - then you'll have plenty of seed to grow this year.

I pulled two beetroot from my garden today. They weren't massive but they have been there a long time. I roasted them and they were delicious
