Your Favourite Squash Recipes

I have a few butternuts needing to be used up - would love some inspiration. What are your all time favourite squash / pumpkin recipes?

I just like to dice them into about 2 cm cubes, drizzle with oil and sprinkle with thyme, salt and pepper and roast in the oven until soft. I then tip them into a serving dish and add some small cubes of blue cheese. Sometimes I put the dish back in the oven for a few minutes to start the cheese melting.
A german woman once made me some curried squash soup. It was amazing.

Pumpkin chips are awesome.
I really like it just roasted, just cut into roasted potato size chunks olive oil, salt, pepper.chuck it in with your Sunday roast.
Soup is good, lots of variations on that.
There’s a few good chutney recipes.

Cube and cook in the oven before putting into a pan with kale, soft goats cheese and plenty of white sauce. Warm it through until the cheese just starts to melt.
