For Nicos and the Walnut Bonanza
3 oz soft butter
2 oz soft brown sugar
a few drops vanilla essence
1 egg, beaten
6 oz SR flour
1 teaspoon nutmeg
3 oz cranberries (you can use sultanas or raisins but I love cranberries!)
3 oz roughly chopped walnuts.
Heat oven 10 180C (Gas 4) and grease baking sheets.
Cream butter, sugar and vanilla essence then gradually beat in the egg.
Mix spice and flour then fold in . Stir in dried fruit and walnuts to distribute.
Place spoonfuls on baking sheets well apart and bake for 15 - 15 mins until golden.
These look like rock buns but because they are creamed not rubbed in they are much softer.
