Sweet Making

Hi,

This terms 'Topic' at school for Hazel is sweet making - I know how to make sugar mice, sugarpaste flowers, chocolates of numerous varieties, filled and unfilled, fudge, toffee etc.... but how do you make taffy?

Better yet - what is taffy?

I think taffy is a sort of toffee/fudge cross. Very sticky and stringy.

Ingredients for Butter Taffy Recipe

* 2 cups light brown sugar
* 2 tablespoons water
* ¼ cup molasses
* 7/8 teaspoon salt
* 2 tablespoons vinegar
* ¼ cup butter
* 2 teaspoons vanilla


Instructions

1. Boil first five ingredients until, when tried in cold water mixture will become brittle.
2. When nearly done, add butter, and just before turning into pan, vanilla.
3. Cool, and mark in squares.

Found this recipe on t'internet, hope it's what you're looking for! Sounds like a lot of salt.

I suspect that recipe is for what the Americans (certainly available in San Francisco) sell as 'salt-water taffee'. It is lovely, reminding me of sweets I had as a child but can't remember the name of - sort of toffee but with a hint of caramel or fudginess. Yumm. I might well give the recipe a try sometime.

I will post some fudge and toffee recipes later if you like. I also have recipes for peppermint creams (easy as no cooking) coconut ice and (somewhere) turkish delight. Let me know what you want me to search out.

I remember making taffy as a child. I seem to recall that you have to pull it after you have prepared it until it achieves a kind of dull finish. Know this is not very helpful -sorry.

'Pulled taffy' was what I was thinking of - salt water taffy is a similar idea I think.

TOH has just done a Wikipedia - chewitts and starburts are apparently English types of taffy!

I think the sweets they reminded me of were mojos - anyone else remember those? were they sort of strawberry and banana etc flavoured soft toffee?

Mojo were really small and you used to get 2 for a penny! Showing my age now!
