Any tried and tested recipes out there for banana muffins. Would like to bake some with the kids tomorrow. So many different ones on the web. I don't like the 1 cup, and gram recipes, can't get my head round them, prefer the oz recipes lol
10 oz plain flour
1 tsp baking powder
1 tsp bicarbonate soda
pinch salt
3 large well ripened bananas
4 oz sugar
1 beaten egg
3 oz butter or marg (softened) or oil.
2 fl oz milk
Preheat oven to 375-400oF (190-200oC)
1. Sift flour, baking powder, bicarb soda and salt.
2. In another bowl mash banana and add sugar, egg, butter and milk and stir well.
3. Combine wet ingredients with dry. Batter should be lumpy but no flour visible. Do not over mix.
4. Fill muffin cases.
Note if using Self-raising flour, omit baking powder. Do not omit bicarb soda.
I have a Banana Choc chip muffin recipe. You could leave out the choc chips (now why would you want to do that?)
10 oz SR flour
1 tsp bicarb
3 oz granulated sugar
3 ripe bananas, mashed
1 medium egg
2 fl oz milk
3 fl oz corn oil
3 oz choc chips.
Cooker to gas 5 190/375
Sift flour, bicarb, sugar, make a well in centre. Add bananas, egg, milk, oil and choc chips. Mix well for about 20 seconds - batter will be lumpy.
Spoon into muffin cases. Bake 10 mins until well risen.
PS the basic muffin is very similar to the above version. Can't beat a bit of chocky though!
